two.
 
Mathematician (taking out calculator and punching several entries):
3.99999999 plus or minus a bit.
 
Accountant:  What do you want it to be?

What is the oldest profession?
 
Doctor:  In the book of Genesis it says that God created Eve from
Adam's rib - a surgical procedure:  Medicine is the oldest
profession.
 
Engineer:  Earlier in the same book, it says that God created the
firmaments out of the chaos - an engineering procedure:
 
Accountant:  Who do you think was responsible for the chaos?
